  • 3 large eggs, separated
  • 3 tablespoons cream cheese, softened
  • 1/4 teaspoon cream of tartar
  • 1 tablespoon honey (optional)


  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Separate the egg whites and yolks into two different bowls.
  3. Add the cream cheese and honey (if using) to the bowl with the egg yolks and whisk together until smooth.
  4. In the bowl with the egg whites, add the cream of tartar and use an electric mixer to beat until stiff peaks form.
  5. Gently fold the egg yolk mixture into the egg white mixture, being careful not to overmix.
  6. Using a spoon, drop the batter onto the prepared baking sheet, forming 6 to 8 rounds.
  7. Bake for 25-30 minutes or until the cloud bread is golden brown and firm to the touch.
  8. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
